Dragon Chicken - Dutch Version of Kitchen

I have the Dutch version of Kitchen and I think I have found a mistake. Yesterday I was making the Dragon Chicken recipe on p415 and all went well until I got to the part where it said "... add the 2 kinds of oils...". I checked the ingredients list, because I thought I overlooked the oil, but there is only mention of one kind of oil; the garlic oil. I used a big dash of regular olive oil, hoping that would work. And it did! The wings were really nice and absolutely not to spicy. But the question remains; what is the story of the missing oil? Thanks in advance, Ineke van der Pol (The Netherlands)

Our answer

In the UK version of Kitchen the Dragon Chicken ingredients include 80mls garlic oil and 80mls vegetable oil - i.e. the two types of oil mentioned in the method. We suspect in translation these have been combined into just one type of oil - the garlic oil which you mention as listed (which should be about 150-160mls).

Olive oil, sunflower oil or vegetable oil could all be used instead, though it is a shame to loose the subtle extra flavour that the garlic adds. We suggest that if you use an unflavoured type of oil then add a fat clove of garlic to the food processor at the same time as the peppers, ginger, salt, vinegar and oil (in step 1). It will be whizzed into the marinade and should have a similar flavour effect to the garlic oil.
