Our answer

Nigella's Nutella Cheesecake (from NIGELLISSIMA) is an easy to make no-bake cheesecake. Often cheesecakes can be frozen, as long as they have been made with full-fat cream cheese. However the manufacturers of Nutella do not recommend freezing this product and we suspect that when the chocolate hazelnut spread defrosts it may suffer from a change of texture. This could affect the texture of the cheesecake slightly, so we would not particularly recommend making the cheesecake ahead and freezing it for a future date. But it could be possible to freeze leftovers, as long as you don't mind if the texture changes slightly on defrosting. You may prefer to freeze the leftovers in individual portions for ease. Defrost in the fridge overnight and consume within 1 day.

If you would like to make a cheesecake ahead for a special occasion then we would suggest trying Nigella's Chocolate Cheesecake. This is a baked cheesecake with a chocolate sauce, though you should make and freeze the sauce separately in a resealable container. Let the cheesecake cool, then refrigerate until completely cold. Leave the cheesecake in its tin and wrap tightly in a double layer of clingfilm and a layer of foil, then freeze for up to 1 month. Defrost the cheesecake and sauce in the fridge overnight then remove from the fridge about an hour before serving so that the cheesecake and sauce lose their chill, before unspringing and drizzling with the sauce. If necessary, warm the sauce very gently until it reaches a pouring consistency.

  • I did freeze it and it came out beautifully. Didn't have time to make last minute so I made on Wednesday and froze; put it in the fridge Sunday at lunchtime and served it Monday lunch. Divine!
