Could I make the Strawberry And Almond Crumble gluten free by using almond flour?
Nigella's Strawberry And Almond Crumble has a combination of almonds and plain flour in the crumble topping. The almonds provide slight texture and crunch to the crumble, which contrasts with the soft strawberries underneath.
Unfortunately, we would not suggest switching the plain (all-purpose) flour completely with ground almonds (almond flour) as the almonds contain quite a lot of natural oils that can be released during cooking. This can cause the crumble topping to be dense and oily, rather than soft and light. Instead, we would suggest using a gluten-free plain flour blend (gluten-free all-purpose baking mix or flour). Just substitute in the same quantity of gluten-free flour for the plain flour, and you can use this gluten-free substitution for all of Nigella's crumble recipes. The topping for the crumble also contains baking powder and most brands of baking powder are now gluten free, but please check the packaging before using as brands do vary.
