Full question
Please explain how to wrap the finished Tres Leches Cake without the wrap touching the topping too much?
Our answer
Nigella's version of Tres Leches Cake has a sponge that includes grated lemon zest, to give a slight flavour lift. The frosting also includes mascarpone, which makes it very creamy and also adds some extra stability to the whipped frosting if you are using either heavy cream or whipping cream rather than double cream.
Nigella uses a fairly standard 9 x 13-inch (23 x 33cm) rectangular tin. This should be deep enough to accomodate the cake and the frosting. When the cake is refrigerated, you should cover it to prevent the top from drying out and forming a crust and also to prevent the creamy frosting from being tainted by any smell from other ingredients in the fridge. You want to try as much as possible to prevent the surface of the frosting from being marked by food wrap or foil. We would suggest that you lay the covering very gently over the top of the dish and don't press down. If the pan has handles on the ends then you can use these to help to anchor the covering. If there are a few marks on the surface of the frosting when you uncover the cake then you can use a small palette knife to smooth the top over again.
