Is it possible to substitute the light brown sugar with jaggery for the Chocolate Chip Cookies? Jaggery is a cane sugar found in South East Asia.

Nigella's Chocolate Chip Cookies (from KITCHEN) have a combination of white and soft light brown sugar. The combination of sugars helps the cookies' texture. The white sugar forms a crisp crust but the brown sugar helps the cookies to remain soft inside.

Jaggery is based on cane sugar but can also contain sap from other plants, such as palm. It is not a standard product and jaggery can vary from region to region with some being very soft and some being quite hard and solid, meaning that the water content varies. This variation means that it is very difficult to recommend it as a substitute for soft light brown sugar as different types of jaggery will give different results. The jaggery also needs to be very finely shaved or grated so that it dissolves properly in the cookie dough. You can certainly try it as an alternative but we are unable to guarantee if the cookies will be quite the same as the ones made with soft light brown sugar.
