Keeping Caramelised Oranges

Asked by lisaroyden. Answered on 5th December 2013

Full question

Hello, I just wondered how long the Chilled Caramelised Oranges would last in a airtight jar please?

Our answer

Nigella's Chilled Caramelised Oranges (from Forever Summer and on the Nigella website) are fresh oranges that are sliced and immersed in a caramel syrup. We are not sure if from your query you want to put them in a jar and keep them as a preserve, but we would mention that the oranges in syrup should be kept in the fridge. We would suggest keeping them in the fridge in an airtight container or a covered bowl for up to 3 days.

The oranges that you can buy in supermarkets have gone through a pasturization (canning) process to make it possible to keep them them, unopened, at ambient temperatures. Quite often they also contain alchohol which helps to improve the keeping qualities, though the still need to be processed properly once in the jar.

Nigella's Caramelized Oranges would make a nice seasonal dessert for the Christmas period, possibly as a lighter alternative to Christmas Pudding on Christmas day.
