Can I line the baking tray with baking paper for the Forgotten Pudding, to stop the meringue from sticking?

Our answer

Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a meringue mixture that is put into a hot oven. The oven is immediately switched off and the meringue is left overnight, which transforms it into a soft slab with a marshmallowy texture, rather than a crunchy meringue. It is then topped with whipped cream and mixed berries.

The meringue should be spread out on the base of a Swiss roll (jelly roll) pan or a rimmed baking sheet with deep sides. The pan is generously greased with butter and this should be sufficient to prevent the meringue from sticking. In wet weather or humid conditions it can be more difficult to get the meringue to set and it can remain a little sticky, but it should still release from the pan. We do not think that parchment is particularly necessary, but you could line the pan with non-stick baking parchment or parchment paper if you like. However make sure that it is the non-stick type and not greaseproof paper and it may help to lightly grease the tin before lining so that the paper adheres to the base and sides of the tin.
