Margarita Cream Flavourings

Asked by SaffaJan. Answered on 8th September 2016

Full question

For the Flourless Chocolate Lime Cake With Margarita Cream, is there anything non-alcoholic I could use for the cream instead of the tequila and Cointreau?

Our answer

Nigella's Flourless Chocolate Cake With Margarita Cream (from KITCHEN) has a whipped cream that is spiked with very small amounts of tequila and Cointreau (or triple sec). These compliment the lime flavouring in the cake and with the lime they make up the ingredients of a margarita cocktail.

It is fine to serve the cake with regular whipped cream if you do not wish to add alcohol. The Margarita Cream will have a slightly orange flavour from the Cointreau, so you may like to flavour the cream by adding the finely grated zest from half an orange plus 1 tablespoon of orange juice to the cream before whipping.
