For the Fig and Olive Chutney, what can I use instead of the Marsala? I don’t use any alcohol in recipes.

Nigella's Fig And Olive Chutney (from NIGELLISSIMA) is an Italian inspired chutney that is quick to make in comparison with more traditional chutney recipes. The recipe includes Marsala wine, a fortified wine from the island of Sicily.

The amount of Marsala used, 60ml or 4 tablespoons, is quite low. So if you need to avoid using alcohol then we would suggest using either 60ml apple juice or 60ml extra water as an alternative. If you don't have Marsala but can use alcohol then you could use Madeira wine or a darker sherry, such as an Oloroso, instead.
