Our answer

Nigella's Mock Mash (from NIGELLISSIMA) is a dish made from semolina. Semolina is coarsely ground durum wheat, the same type of wheat that is more finely ground to make 00 flour and used for pasta. Semolina is perhaps most usually known in the dessert semolina pudding, but when cooked with milk, Parmesan and butter it makes a thick and comforting starchy side dish. Nigella called the dish Mock Mash as it feels very much like you are eating a bowl of creamy puréed potatoes.

The Mock Mash is similar to polenta (though it is not gluten-free) so can be served with dishes such as Osso Bucco or Nigella suggests it as an accompaniment to her Venetian Stew. It would also be good with Beef Stew With Anchovies And Thyme, Oxtail With Milk Stout And Majoram or any dish that has an abundance of rich sauce or gravy that can be spooned over the Mock Mash.
