Should I use buffalo mozzarella for the Mozzarella In Carozza or would the cheaper version work better?

Nigella's Mozzarella In Carozza (from Nigella Bites and on the Nigella website) is a type of Frech toast sandwich, filled with mozzarella. There are 3 types of mozzarella generally available in supermarkets. Buffalo mozzarella and cow's milk mozzarella, both of which are often sold as balls and come packed in a whey liquid, and a dryer mozzarella that is sold in blocks. The dry version is usually grated or shredded and used for topping pizzas.

We would suggest using the fresh cow's milk mozzarella for the Mozzarella In Carozza. It is firm enough to cut into strips, but soft enough that it will melt cremily as the sandwich is cooked. Buffalo mozzarella is delicious but softer, and as it is more expensive is better saved for salads where its flavour and texture can be fully appreciated.
