Muffins Using Other Fruits

Full question

I made the Apple And Cinnamon Muffins and they've come out beautifully. The perfect easy recipe for a Sunday afternoon. Would it work with other fruit?

Our answer

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are made with diced fresh apple. The apple adds sweetness, a little moisture and a contrast in texture to the soft crumb of the muffin. It should be possible to use some other fruits and pears would be an easy alternative. Use one large or two small pears and preferably use a firm pear as a very ripe one could soften and break down too much during baking. Stone fruits such as peaches and plums could also be used in season and again we would suggest using firm specimens. You would use two peaches or 3 to 4 plums.

We suspect also that you may be able to use fresh blueberries or small blackberries. The weight of an apple is very approximately 170g so, allowing for the two apples and removal of the apple cores, you would need about 270g (10 ounces) of berries. You could also use hazelnuts or pecans instead of the almonds, if you would like to experiment more. However we would mention that we have not tried the fruit alternatives so are unable to guarantee the results.
