Muscovado Sugar in Honey Chocolate Cake

Hi, I live in India and I am not able to find muscavado sugar. Can I use demerara coffe sugar instead in the Honey Chocolate Cake?

Our answer

Muscovado sugar is an unrefined sugar made from sugar cane. It is different from granulated sugars as it is is moist and will clump together, rather than flowing freely. Unfortunately we would not suggest using demerara sugar as an alternative as it is granulated and in fairly large granules, so it will not dissolve as easily and will not provide as much moisture, which is important in this squidgy cake.

We would suggest substituting the 275g of light muscovado sugar with 250g of (white) caster sugar plus 2 tablespoons of molasses or treacle. Molasses should be available in larger stores in India or you can buy it on-line. But if this is also proving difficult then relpace the 2 tablespoons of molasses with 2 extra tablespoons of honey.
