Ingredients

  • 6 large potatoes
  • 2 large leeks
  • mature cheddar
  • 2 tablespoons flour
  • 300 millilitres milk
  • butter
  • 1 pinch of salt
  • 1 pinch of pepper
  • herbs

Method

Creamy Cheese, Leek and Potato Bake is a community recipe submitted by cassis and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Either part boil the potatoes or slice them so thin that they will be 'done' in the oven. Chop up the leeks, quit roughly.
  • Make the sauce by melting a knob of butter with the milk, then add flour, keep stirring to keep a smooth sauce that is not too thin, then add half the grated block of cheese, keep stirring until the sauce is smooth. Add salt etc. to taste
  • Sprinkle leeks on top, pour over sauce evenly, then add the rest of grated cheese. Bake at 180c for 30-35 mins, until brown at top and when the potatoes are easily pierced by fork. Enjoy!

    • I make this, too. Delicious, but for fat days only. For my version, parboil fairly thickly sliced potatoes. Layer half potatoes, then chunky sliced leeks, add some dry-fried chunks of bacon (cooking bacon is v. cheap), top with remaining potato and pour on sauce. I use parmesan as well as cheddar to get cheesier flavour and a few less calories.

    • I have just read this recipe,creamy cheese,leek and Potato .Its a bit too hot in Auz now but soon its going to be perfect on a cold night.Im always trying to grow leeks they are a wonderful vegetable SO yes cannot wait to down load,bake up and dish it all up !!!
