Nutella Brownie Alternative

Asked by madhutter. Answered on 20th August 2016

Full question

I love the Nutella Brownie recipe but would like to create a nut-free alternative. Can I simply substitute Nutella for a nut-free chocolate spread and achieve the same results? Thanks! Maddy.

Our answer

Nigella's Nutella Brownies (from SIMPLY NIGELLA) are made with just two ingredients, eggs and chocolate hazelnut spread. They bake into an extremely indulgent and fudgey brownie that is gluten free. Nutella and other chocolate hazelnut spreads contain vegetable oil and sugar, plus hazelnuts, skim milk powder, and cocoa. Chocolate spread also contains vegetable fat and sugar but as here is no hazelnut paste we suspect that the vegetable fat content is higher.

The hazelnuts may play some part in helping to emulsify the mixture together and helps the mixture to set as it bakes, and we are concerned that a brownie made with milk chocolate spread will become a little greasy. If you were to try this version then we suspect you would need to add some plain flour to the mixture instead, however as we have not tried this version we regret that we cannot advise on quantities. We would also note that many chocolate spreads contain small amounts of hazelnut, so the ingredients list on the jar should be checked very carefully.
