Servings for Chocolate Olive Oil Cake

Full question

I would like to make the olive oil chocolate cake to serve 25 - 30 people. If I double the recipe what size pan should I use. And will doubling be enough?

Our answer

Nigella's Chocolate Olive Oil Cake (from Nigellissima and on the Nigella website) is a dairy free and flourless cake and the cake will serve between 8 and 12 people, depending on appetite and what it may be served with. Doubling the recipe may not be enough and we would not recommend trying to bake a doubled quantity in a larger tin as it will be difficult to bake the cake properly.

We would instead suggest making 3 of the cakes. If you can borrow some pans to do this then it will help. Otherwise the cakes could be made over a few days as they will keep for 2 to 3 days in an airtight container in a cool place or can be frozen for up to 3 months, wrapped tightly in a double layer of clingfilm (plastic wrap) and a double layer of foil. As the cake is gluten free it is usually easier to leave the cake on the base of the springform tin. However if you only have one tin and need to make 3 cakes then you can cut circles of card (or use a thin cake board) to fit in the bottom of the tin. Wrap the circles or board tightly in a layer of foil. When you bake each cake put one in the base of the tin then top with the circle of baking parchment. When the cake is cool you can then slip the cake, on its carboard circle, off the base of the tin.
