Storing Chocolate Peanut Butter Sauce

If I put the sauce from the Chocolate Peanut Butter Fudge Sundae in a sealed sterilised jar, how long will it keep for? Thanks.

Our answer

Nigella's Chocolate Peanut Butter Fudge Sundae (from NIGELLA EXPRESS) has an easy but rich sauce made from melted chocolate, fresh cream, peanut butter and golden syrup. Unfortunately as the sauce contains fresh cream it does not keep for a long period, even in a sterilised jar. It should be kept in the fridge and used within 1 week. It will solidify when chilled so warm gently in a mirowave in short bursts of low power, stirring between each burst, or in a heatproof bowl set over a saucepan of boiling water.

The sauce can be frozen in a resealable container for up to 3 months. Defrost the sauce overnight in the fridge and warm gently before using. You may also like to consider Nigella's Salted Caramel Sauce for ice cream. This has the same storage and use guidelines as the Chocolate Peanut Butter Fudge Sauce.
