Storing Chocolate Pudding

I want to know if the Chocolate Pudding recipe can be frozen and eaten once defrosted safely? Also how long they can be kept refrigerated before being eaten?

Our answer

Nigella's Chocolate Pudding (from NIGELLA EXPRESS) is a thick chocolate custard that, when chilled, sets into a silky chocolate cream. As the pudding is made with fresh eggs it should be cooled and refrigerated as quickly as possible (and within 2 hours of making). It should be stored in the fridge and eaten within 3 days of making.

The pudding would be safe to eat if frozen and defrosted but we do not recommend freezing as the texture of the pudding can change once it has thawed. Unfortunately home made mixtures can separate slightly or end up with a grainy texture. Some commercial products can be frozen, but these are usually made in extremely controlled conditions and sometimes contain extra ingredients such as stabilisers.
