Is it possible to preserve Nigella's Salted Caramel Sauce by putting it, while still hot, into hot sterilised jars and sealing them. How long would this keep for and would the filled jars need refrigerated when cooled.
Nigella's Salted Caramel Sauce is a fairly easy sauce to make as it is a combination of butter, golden syrup, cream and sugars, rather than cooking melted sugar into a caramel. However it should be stored in the fridge after it is made and we would not recommend keeping it at room temperature for any length of time, even in sterilised jars.
The sauce will keep for about 2 weeks and as it is kept in the fridge the container does not need to be sterilized. The sauce can also be frozen in freezerproof containers for up to 3 months. Thaw the sauce overnight in the fridge before using.
