Dear Team Nigella, the recipe for the Salted Chocolate Tart uses cornflour, I would prefer to use arrowroot, what are your views on this? Thank you.

Our answer

Nigella's Salted Chocolate Tart has a cookie crumb base that has a thick chocolate filling. The filling is thickened with cornflour (cornstarch), so the tart is egg-free.

Arrowroot is used as a thickener, often in the same way as cornflour by making a paste (slurry) and adding this to hot liquid. However, arrowroot is not ideal for dairy-based sauces as it can sometimes leave them with a slightly slimy texture. For this reason we would prefer to use cornflour, as the ingredients for the tart filling include milk and double cream.
