Totally Chocolate Chip Cookies Without Egg

Hi, I have tried Nigella's Totally Chocolate Chocolate Chip cookies a number of times with great results - absolutely love the recipe. However, I need to bake it this time for a vegetarian who does not eat eggs. Can the egg in the recipe be omitted? I do not have access to egg replacer powder or applesauce (the common replacements for egg). Are there any other replacements? Or is it actually possible to just omit the egg? Nigella's Totally Chocolate Chocolate Chip cookies (from Nigella Express and on the Nigella website) are very popular and like many cookie recipes they contain eggs. Unfortunately we do not think that they will work very well if the eggs are omitted as the eggs provide both moisture and leavening to the mixture. If the eggs are omitted then the cookies will be heavy and hard.

We would insted suggest looking at some cookie recipes that already do not contain eggs. Nigella's Christmas Chocolate Biscuits in Christmas (p207) and Granny Boyd's Biscuits from Domestic Goddess (p204) are both recipes that produce a buttery chocolate biscuit and the Christmas biscuits are covered in a chocolate glaze. Rocky road bars are also easy to make and a popular bar cookie and Nigella has several recipes for this type of cookie.
