Vinegar in Honey Pie

Asked by sizzlesyl. Answered on 22nd July 2021

Full question

Is the apple cider vinegar necessary in the honey pie? I didn’t have any on hand and was going to use white vinegar but forgot to put it in at the last second!

Our answer

Nigella's Honey Pie (from SIMPLY NIGELLA) has an easy press-in crust that is filled with a sweet and sticky honey-based custard. The original recipe contained (apple) cider vinegar, so this has been used in Nigella's own recipe.

The vinegar and salt in the filling are there to temper the sweetness of the honey and ensure that the filling is not too cloying. If cider vinegar is not available then fresh lemon juice or white wine vinegar would be good alternatives. If the vinegar is omitted completely it should not particularly affect the way the pie sets, but will mean that the filling tastes very sweet.
