Nigella's Crisp Green Salad With Parsley And capers is a simple but sublime summer salad that it crisp and herby and balanced with briny capers and a sweet-sour dressing. The dressing uses a combination of Moscatel vinegar and raw apple cider vinegar.
Moscatel vinegar is made using sweet and very ripe Moscatel (also known as Muscat) grapes, which are usually made into sweet dessert wines. The fruity and slightly honeyed flavour of the Moscatel grape must is preserved as the vinegar is made with a cold fermentation method called Schutzenbach. The vinegar itself is not only exceptional in salads, but good as a marninade or drizzled over fruits. Nigella mentions in the introduction to the recipe that if you don't have Moscatel vinegar then you can use any other sweet vinegars that you may have, though we would try to avoid using balsamic glaze, as the commercial versions are usually balsamic vinegar mixed with thickeners, and it can be harder to blend this with other dressing ingredients.
