Seriously would love to make this meatloaf. My only question would be for the minced beef - would this be regular with some fat content or lean beef as you have the fat from the bacon.?
Our answer
The recipe for Ed's Mother's Meatloaf (from KITCHEN) was given to Nigella by the late, great Ed Victor. It is moist and surpisingly light and is wonderful both hot and freshly made, or cold in sandwiches.
Many meatloaves can be dry but the onions slowly cooked in duck fat (or butter) help to add moisture and flavour. The bacon wrapped around the outside of the meatloaf is mostly for flavour. Here we would prefer to use "regular" beef mince (ground beef) with a higher fat content (between 12% and 20% fat) and not the very lean or low fat options (5% fat or less), as the low fat options will tend to dry out too quickly as the meatloaf bakes.
