This tart is amazing and it was a huge success. I replaced the cookies in the base by home made gingerbread cookies (I always have some hanging around in my freezer) and I think it elevated the flavour and made it sound more fancy :) The lemon curd I used was the great Nigella recipe and I added some on top to help with the decoration to.
