I had an absolute blast making this cake! I recently married my partner of 10 years, and from the generous donations of family and friends I was able to purchase the beautiful KitchenAid mixer you see in the photo. This was my first bake using it, and I don’t think I will ever go back to mixing by hand! I made the recipe gluten free by changing the flour to GF plain flour and adding a teaspoon of xanthum gum. The cake is so beautifully moist! I used a tin that I normally use for the Nigella’s Christmas recipe ‘Spruced-Up Vanilla Cake’ and it worked perfectly and gives a real autumnal feel to the cake. I topped it with a caramel sauce and chopped pecans. It went down a treat last night for my family bonfire celebrations!
