Chocolate Peanut Butter Fudge Sundae

Introduction

This is the ultimate ice cream sundae. Obviously, if you're not a peanut-eater, it won't be for you, but for everyone else it is the stuff of dreams. Last time I made this sauce, I nearly had to make another batch, I'd eaten so much before even getting the ice creams out of the freezer.

I made a jar of this for a friend to take home for her supper recently. As soon as she'd had it she sent a text saying, "Bottle that sauce, make millions". Well, maybe, but until then, here's the recipe.

For US cup measures, use the toggle at the top of the ingredients list.

Chocolate Peanut Butter Fudge Sundae

Ingredients

Serves: 4 very lucky people

Metric Cups
  • 175 millilitres double cream
  • 100 grams milk chocolate (chopped)
  • 100 grams smooth peanut butter (Skippy for preference)
  • 3 tablespoons golden syrup
  • 4 scoops caramel ice cream or toffee ice cream
  • 4 scoops chocolate ice cream
  • 4 scoops vanilla ice cream
  • 4 tablespoons salted peanuts (roughly chopped or left whole to taste)
  • ¾ cup heavy cream
  • 4 ounces milk chocolate (chopped)
  • ½ cup creamy peanut butter (Skippy for preference)
  • 3 tablespoons golden syrup or light corn syrup
  • 4 scoops caramel ice cream or toffee ice cream
  • 4 scoops chocolate ice cream
  • 4 scoops vanilla ice cream
  • ¼ cup salted peanuts (roughly chopped or left whole to taste)

Method

  1. Put all the cream, chopped chocolate, peanut butter and golden syrup into a saucepan and place on the heat to melt, stirring occasionally. In about 2 minutes you should have your sauce ready.
  2. Get out four sundae glasses and put a scoop of toffee or caramel ice cream in each, followed by one of chocolate and then another of vanilla.
  3. Pour some chocolate peanut butter fudge sauce over each sundae and sprinkle with the salted peanuts. Hand them round and wait for people to weep with gratitude.

  • In the Nigella Express TV show she uses 200 ml of condensed milk instead of the double cream and golden syrup, so if anyone had condensed milk on hand instead that would also do very well.

  • Love this recipe. But try it with dark chocolate and crunchy peanut butter. Even better, in fact spoon out of the jar good!

  • WOW! Simply amazing! Not a fan of peanut butter but purchased one at the store to taste... Left it in the refrigerator for weeks & realised this was the perfect recipe to use it all up. Did NOT disappoint!

  • This is truly amazing. I have made this version, and the version featured on the TV series where Nigella uses condensed milk instead of cream and golden syrup. I prefer the condensed milk version. Be sure to add a splash of water if using the condensed milk otherwise you will end up with a very thick caramel - not that that's a bad thing! The salted peanuts are essential. Toasted flake almonds go well, too.

  • OMG, soo delicious. I only use roasted/salted peanuts as I like more salt and less sugar. I could eat half of this recipe by myself.
