Introduction

I find this a real life-saver. I make a container full of this and then I just have to whisk in egg, milk and melted butter whenever I need a breakfast's worth of pancakes. Serve with the syrup of your choice.

Home Made Instant Pancake Mix

Ingredients

Makes: about 15 pancakes

Metric Cups

For the Pancake Mix

  • 600 grams plain flour
  • 3 tablespoons baking powder
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon salt
  • 40 grams caster sugar (or vanilla sugar)

For the Batter - to Each 150g / 1 Cup of Pancake Mix, Add and Whisk Together

  • 1 large egg
  • 250 millilitres semi skimmed milk (or full fat)
  • 1 tablespoon melted butter

For the Pancake Mix

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons superfine sugar (or vanilla sugar)

For the Batter - to Each 150g / 1 Cup of Pancake Mix, Add and Whisk Together

  • 1 large egg
  • 1 cup reduced fat milk (or full fat)
  • 1 tablespoon melted butter

Method

  1. For the pancake mix: Mix all the ingredients together and store in a jar. When ready to make the pancakes, proceed as follows.
  2. Heat a flat griddle or pan with no oil.
  3. Spoon drops of 1½-2 tablespoons of batter onto the hot griddle or into the pan and, when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.
  4. Should make about 15 pancakes, each about 8cm/3inches in diameter.

  • I’ve tried several pancakes recipe and this is by far the most easy and delicious pancakes I ever made in my entire cooking journey. 10x better than McD. The blueberry sauce was a perfect pairing to the soft and fluffy pancakes!

  • My twins love (!) pancakes, and I love that I can easily make them for them, without needing to resort to preservative-laden store bought pancake mix when in a hurry. I add a bit of cinnamon, and keep a vanilla bean in the jar.

  • I so love this recipe!!!
    I never mastered making pancakes for some reason, too hungry maybe, and all the store bought ones have a vanilla flavour that doesn't go well with savoury toppings. I have however replaced the white flour with wholemeal and have removed the sugar as my hubby is a diabetic. They still work and are the best tasting pancakes!!!!

  • Love this pancake mix and is a staple in our household although I make it with spelt flour as we cannot have wheat due too fructose malabsorption. I just use less milk but it works out just fine. My youngest was just relieved that he didn't have to forgo his pancakes as this recipe works well with the spelt flour. On an aside the pancake warmer that is featured has been out of production but I recently learnt that it is once again available. It is made by silicone zone in the US but not sure if they have a stockist in the UK for it.

  • I have to admit I thought these maybe too sweet as we often have savoury pancakes but they aren't, they are a must have for pancake lovers!!!! My 7yr old loves helping me make these they are so easy to whip up, we have them with Nigella's blueberry syrup, absolutely delicious.

  • we love this recipe as my little lad likes to have bacon in his. we cook the bacon pore over the pancake mix then cook the pancakes. he loves it.

  • Just cooked these for my poorly son who was home from school off his food. He loved them. Different to the usual recipe I have used and they tasted great. I put homemade lemon curd in mine...yummy!
