Introduction
This recipe comes from The Silver Palate Cookbook and is one of the absolute best lemon cakes you can make and eat. Made with lots of zest and juice of lemons, this cake has the right touch of sweet and tang, and will make you happy after the first bite!

Ingredients
Serves: 8-10
- ¼ butter (sweet, softened)
- 2 cups granulated sugar
- 3 eggs
- 3 cups sifted all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- 2 tablespoons grated lemon zest
- 2 tablespoons lemon juice
- lemon icing
