Cypriot Beef Stifado

Ingredients

Serves: 4

  • 1½ pounds stewing beef
  • 3 pounds sliced onions
  • 3 bay leaves
  • 1 salt
  • 1 pepper
  • 1 cup vinegar
  • vegetable oil (for frying)

  • Fry beef until brown, place in ovenproof dish
  • Fry sliced onions in same pan , spread over the beef
  • Add rest of ingredients and a little water, another wineglass should do it
  • Cover with foil
  • Cook at 170c for 3-4 hours! Some people add a little tomato puree and use red wine instead of the vinegar
