Metric Cups

For the Chicken

  • 4 chicken breasts
  • 3 tablespoons flour
  • freshly ground pepper
  • salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • fresh basil

For the Cream Sauce

  • 1 tablespoon butter
  • 2 cloves garlic (crushed)
  • 125 millilitres chicken stock
  • 125 millilitres cream
  • 60 millilitres lemon juice
  • 2 tablespoons fresh basil (finely chopped)
  • freshly ground pepper
  • salt

  • 4 fluid ounce cream
  • 2 fluid ounce lemon juice
  • 2 tablespoons fresh basil (finely chopped)
  • freshly ground pepper

Method

Chicken With Basil Cream Sauce is a community recipe submitted by Bec26 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Combine flour, pepper and salt in a bowl and coat the chicken, shaking off excess. Heat oil and butter in a pan, add the chicken and cook over medium heat for 5-6mins each side.
  • Remove from the pan and keep warm.
  • Basil Cream Sauce: Wipe out the pan, heat the butter, add the garlic and cook for 2mins. Add chicken stock, cream and lemon juice, bring to the boil and reduce a little.
  • Just before serving, add the basil, season with pepper and salt and serve the sauce drizzled over the chicken.
