Serves: Depends on size of jar you use

Metric Cups
  • 2 lemons
  • 225 grams white sugar
  • 3 medium eggs
  • 60 grams butter
  • 2 lemons
  • 7⅞ ounces granulated sugar
  • 3 medium eggs
  • 2⅛ ounces butter

Method

  • Put butter, sugar and strained lemon juice into a bowl.
  • Sit bowl over a pan of simmering water and cook till sugar is completely dissolved.
  • Remove from heat and allow to cool a little.
  • Add well-beaten eggs.
  • Return to heat and cook, stirring constantly, till mixture coats the back of a wooden spoon.
  • Pour into small jars, cover and cool.
