Metric Cups
  • 125 grams unsalted butter
  • 125 grams caster sugar
  • 2 eggs
  • 50 grams rice flour
  • 50 grams tapioca starch or coconut flour
  • 25 grams chopped nuts
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 eating apples
  • 2 tablespoons milk
  • 40 grams raisins
  • 70 grams ground almonds
  • 70 grams caster sugar or icing sugar
  • 2 tablespoons coconut oil
  • 1 squeeze lemon juice
  • 1 teaspoon best vanilla extract
  • 4⅖ ounces unsalted butter
  • 4⅖ ounces superfine sugar
  • 2 eggs
  • 1¾ ounces rice flour
  • 1¾ ounces tapioca starch or coconut flour
  • ⅞ ounce chopped nuts
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 eating apples
  • 2 tablespoons milk
  • 1⅖ ounces raisins
  • 2½ ounces almond meal
  • 2½ ounces superfine sugar or icing sugar
  • 2 tablespoons coconut oil
  • 1 squeeze lemon juice
  • 1 teaspoon best vanilla extract

Method

  • Mix the flours, sugar, butter, eggs together.
  • Add in the grated apple, raisin and chopped nuts and cinnamon.
  • Place into muffin cases and into muffin tins.
  • Blend the ground almonds, sugar, oil and lemon juice and vanilla together to make the marzipan icing.
  • Bake the cupcakes in a 200 degree hot oven for 15-20 mins and then top with the marzipan icing when cool.
  • Decorate with a few flaked almonds or dried fruit.
