Preheat oven to mod.180C . Brush a 17cm round shallow tin with butter and paper the bottom with baking paper. Sift flour into a bowl add sugar and stir well. Put in the butter and crumble in through the flour Break the egg into it and stir until it is soft dough. I do all that in the processor. Press 2/3 of it into the tin (I chill it for a while first) pop in the filling (below) then drop little balls if the remaining dough onto the top. Bake 35 min and cool in the tin, nice with a sprinkle of coconut if you like it. FILLING - Place all in a saucepan and stir constantly over lowish heat until it is thickened. The dough is sticky and it is easier to use a plastic glove and pat it into the tin with your fingers.
