Light as a Feather Orange Cake

This recipe produces a very delicate and fluffy, very fragrant cake, delicious on its own or paired with buttercream frosting. If you want orange goodness that melts in your mouth, try this one!


Serves: 8

  • 16 tablespoons butter
  • 2 cups sugar
  • 4 medium eggs
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon vanilla extract
  • ¾ teaspoon orange extract
  • 1 tablespoon orange zest
  • 2 cups flour
  • ½ cup orange juice

  • Whisk softened butter, cream butter and sugar together until fluffy. Add the eggs and beat until even lighter and fluffier, without overbeating.
  • Add baking powder, soda, vanilla and orange extract and orange zest. Mix well. Add flour and mix until uniform. Add orange juice and mix until smooth and well blended.
  • Pour into 2, 8" cake pans, buttered, floured, and lined with parchment paper.
  • Bake at 350 to 360 degrees Fahrenheit for 30 minutes, or until golden and the cake is pulling away from the edges of the pan. Allow to cool in the pan for 10 minutes, then transfer to a cooling rack.
  • Serve with a dusting of powdered sugar, or with a buttercream frosting of your choice.
