Cauliflower Soup

Introduction

Threw this together really quickly and was quite impressed with the results. Very few ingrediants, work, and time but really nice !!

Ingredients

Serves: about 4

  • ½ packet frozen cauliflower
  • ⅗ litre chicken broth
  • 1 red onion
  • 37500 millilitres heavy cream
  • ground cumin
  • dried thyme
  • fresh parsley
  • salt
  • pepper

Method

Cauliflower Soup is a community recipe submitted by Chunkychocchip and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Place the cauliflower, stock, and a peeled quatered red onion and a scant sprinkle of the parsely and thyme in a pan bring to the boil and simmer for about 20 - 30mins.
  • When the cauliflower is cooked, blend ( I used a handheld blender in the pan carefully) Then added salt and pepper (quite a bit-but to taste) add about a teaspoon of cumin and the heavy cream.
  • Mix it up and serve.
  • Additional Information

    I added a bit of cumin on the top to serve, but chives might be nice. Also had it reheated the next day. Really nice and very easy, quite filling !!
