Ingredients

Serves: 10-12

Metric Cups
  • 3 litres vanilla ice cream (2-3 litres, good quality)
  • ⅓ bottle white rum
  • 2 litres passionfruit juice
  • 2 tins cocktail fruit
  • 1 bottle cava (dry)
  • 5¼ pints vanilla ice cream (2-3 litres, good quality)
  • ⅓ bottle white rum

Method

  • Put the rum with the cocktail fruits into a bowl and leave it in there around 3 to 4 hours
  • Half an hour before you mix everything together put the ice cream out of the freezer, so it softens up a little
  • Put the vanilla ice cream into the punch bowl add the cocktail fruits with the rum, the passionfruit juice and the bottle of cava together and you will have a nice fluffy punch.
  • Please note that the ice cream does not melt completely at first, but it does not matter.
