Introduction

This recipe comes from Sainasburys magazine of years back, it is to die for, and is perfect with Christmas pudding.

Ingredients

Serves: 4

  • 4 ounces butter
  • 8 ounces soft brown sugar
  • 2½ fluid ounces port
  • 2½ fluid ounces medium sherry
  • 1½ pints heavy cream (or double cream)

Method

  • Melt the butter and sugar together then allow to cool slightly, then whisk in the alcohol.
  • I whip up as much cream as I want then add the mixture to taste.
  • It keeps very well in a covered jar in the fridge , but once mixed with cream it needs eating quickly- not difficult!
