This is an easy salad that's surprisingly filling.
- 1 avocado
- 4 ounces cubed chicken
- 1 cup fresh spinach
- ½ lime
- 1 tablespoon lemon pepper
- 1 teaspoon salt
- 1 tablespoon olive oil

- Heat the olive oil in a small pan. Once it's hot carefully drop in the chicken. Add the lemon pepper seasoning (or more to taste). Make sure the chicken is thoroughly cooked and seasoned.
- Wash the spinach and place onto a plate. Add the cooked chicken on top. Cube the avocado meat and add to the plate. Squeeze the half lime over the food and then sprinkle the salt on top.
- Perfect for a light lunch with a diet soda or iced tea.
