This is an easy salad that's surprisingly filling.
- 1 avocado
- 113 grams cubed chicken
- 250 millilitres fresh spinach
- ½ lime
- 1 tablespoon lemon pepper
- 1 teaspoon salt
- 1 tablespoon olive oil

Heat the olive oil in a small pan. Once it's hot carefully drop in the chicken. Add the lemon pepper seasoning (or more to taste). Make sure the chicken is thoroughly cooked and seasoned.
Wash the spinach and place onto a plate. Add the cooked chicken on top. Cube the avocado meat and add to the plate. Squeeze the half lime over the food and then sprinkle the salt on top.
Perfect for a light lunch with a diet soda or iced tea.
