This is another of my Party specials that I always take for the buffet table, again cheats paradise. (you know me) but quick and easy. Always the first dish to disappear.

Ingredients

Metric Cups
  • 2 chicken breasts (marinated in balti spices to turn into |tikka - chopped into bite size pieces)
  • pilau rice
  • 1 lemon peel (finely grated)
  • 1 bunch spring onion (chopped)
  • 1 bunch fresh coriander (chopped finely)

  • 1 bunch cilantro (chopped finely)

  • Put rice in a bowl add the chicken, spring onions, coriander and grated lemon. Stir well.
  • tip onto presentation plate.
  • sprinkle on remaining coriander, spring onions and juice of lemon.
  • This goes down soo well especially with the menfolk enjoying a beer or a glass or something nice.
