Pasta With Courgettes, Goats Cheese and Lemon

Introduction

This is a really yummy, simple recipe, although a lot of chopping is involved. I wouldn't worry too much about the ingredient quantities, the measurements are just approximate. I just use whatever I have left lurking around and do everything by eye really. Sorry if the recipe seems long, but I can't help but try and be really specific! Serves 2 (or a greedy 1 of me)

Metric Cups
  • 200 grams pasta (any short pasta will do)
  • 2 tablespoons olive oil (approximately - enough to coat the veggies in the pan)
  • 150 grams full fat soft goat's cheese
  • 1 large courgette
  • 1 medium onion
  • 1 clove garlic
  • 1 lemon
  • pepper
  • 7 ounces pasta (any short pasta will do)
  • 2 tablespoons olive oil (approximately - enough to coat the veggies in the pan)
  • 5⅓ ounces full fat soft goat's cheese
  • 1 large zucchini
  • 1 medium onion
  • 1 clove garlic
  • 1 lemon
  • pepper

Method

  • Chop the onion and garlic finely. Chop the courgette into roughly 1cm slices and then chop each slice into eighths. Cut a thin slice (0.5cm) of lemon from the middle and chop that into eighths.
  • Cook the pasta according to instructions.
  • While the pasta is cooking, chuck the onion, garlic, courgette and lemon into a pan and coat with olive oil. Leave to cook on a medium heat for about 10 minutes, stirring occasionally, or until the courgette is soft.
  • Remove from the heat, and stir in the goats cheese until it has melted a coated everything evenly. If you think the sauce needs to be a bit runnier, add some more olive oil to loosen it up a bit. Add the juice from the lemon to taste, but you want a little tang. Add pepper to taste.
  • Mix with the pasta and eat up!
