Metric Cups
  • 1 tablespoon olive oil
  • 1 tablespoon wholegrain mustard
  • 2 tablespoons maple syrup
  • 1 clove garlic (crushed)
  • 1 teaspoon lemon
  • thyme
  • 2 chicken breasts
  • 2 rashers maple-cured bacon
  • 1 tablespoon olive oil

Method

  • Mix the olive oil, maple syrup, garlic, mustard and thyme in a bowl. Use to coat the chicken.
  • Place in an ovenproof dish. Top each piece of chicken with a ruffled rasher of bacon.
  • Spoon over any remaining coating and add 3 tablespoons of cold water.
  • Roast at 180 degrees C for about 25 mins.
