Introduction

A cake which is good with coffee or with ice cream as a pudding.

Ingredients

Serves: 6

  • 227 grams self-raising flour
  • 85 grams butter
  • ⅛ litre milk
  • 28 grams melted butter
  • ⅔ kilogram plums
  • 1 teaspoon baking powder
  • 85 grams superfine sugar
  • 1 large egg
  • 113 grams sugar
  • cinnamon

  • Rub butter into flour, mixed with superfine sugar and baking powder.
  • Beat the milk and egg together then stir into the dry mix to make a stiffish batter.
  • Spread over a greased 12 by 9" baking tin and brush the surface with melted butter.
  • Cover completely with halved stoned plums. Sprinkle with sugar and cinnamon mix.
  • Bake at 200C for 30-40 mins.
