Spiced Apple Cake

Very tasty cake with slices of apple in the centre and a light spiced taste.


Serves: 6

  • 1 pound apples
  • 8 ounces self-rising flour
  • ½ teaspoon ground cloves
  • ¼ teaspoon grated nutmeg
  • 5 ounces soft margarine
  • 8 ounces superfine sugar
  • 2 eggs
  • confectioners' sugar (to dust)

  • Place the flour, cloves and nutmeg in a food processor and mix for a couple of seconds.
  • Add the marg, sugar and eggs and process for 10-12 seconds or until well blended.
  • Spoon half of the mix into a prepared tin (8" round) and spread evenly.
  • Cover with the apple slices and then top with the remaining cake mix.
  • Bake in an oven (Gas 3/325f/170c) for 90 mins/until well risen. Leave in tin to cool.
  • Remove from tin and dust with confectioners' sugar.
