Amazingly tasty, fat free and full of goodness! These are a great breakfast muffin or mid-afternoon snack for when you desperately need something sweet and guilt free. Makes about 12 large muffins.

Amazingly tasty, fat free and full of goodness! These are a great breakfast muffin or mid-afternoon snack for when you desperately need something sweet and guilt free. Makes about 12 large muffins.

Ingredients

Serves: 12-14

Metric Cups
  • 210 grams wholewheat flour
  • 4 tablespoons mixed seeds (ground)
  • 105 grams porridge oats
  • 200 grams brown sugar
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 150 grams carrots (grated)
  • 150 grams apples (coarsely grated)
  • 75 grams raisins
  • 50 grams fresh apricots (chopped)
  • 200 millilitres milk
  • 2 medium eggs
  • 1 teaspoon vanilla
  • 7⅖ ounces wholewheat flour
  • 4 tablespoons mixed seeds (ground)
  • 3¾ ounces quick-cooking oats
  • 7 ounces brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 5⅓ ounces carrots (grated)
  • 5⅓ ounces apples (coarsely grated)
  • 2⅔ ounces raisins
  • 1¾ ounces fresh apricots (chopped)
  • 7 fluid ounces milk
  • 2 medium eggs
  • 1 teaspoon vanilla

Method

  • Preheat oven to 190 degrees C.
  • In a jug, combine milk and eggs - put to one side.
  • In a separate large bowl, combine all other ingredients and thoroughly mix (using hands is best)
  • Make a well and combine milk mixture until all well mixed.
  • Spoon batter into muffin tins (lined with cases is best - otherwise well greased) until about 3/4 full.
  • Bake for 20-30 minutes until quite firm to the touch. .
  • Makes 12-14 muffins depending on size.
