Prawn Star Curry

Introduction

This is a really fresh curry that is excellent if you are on a diet!! My fave curry recipe.

Ingredients

Serves: 4-6

  • 4 courgettes (cut into half then cut into strips)
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon chilli powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 2 tablespoons fresh ginger (grated)
  • 4 cloves garlic (grated)
  • 1 lemon (juice of)
  • 2 tins tomatoes
  • prawns (however many you want, I recommend that you get cooked and peeled ones)
  • salt (to taste)
  • pepper (to taste)

Method

  • Heat the pan with the teaspoon of oil and add the garlic and grated ginger cook for a few second then add the spices with half a cup of water stir and leave for two mins and add the courgettes and cook until the courgettes have started to soften.
  • Then added the tinned tomatoes and salt and pepper leave for a further 5 mins.
  • Add the prawns 5 mins before you want to serve the meal (if you cook the prawns for too long the turn very rubbery) let them warm through for a min or so, add the coriander lemon juice and more salt and pepper if needed.
  • Stir through and serve with rice. Yummy!
