Ingredients

Serves: 12

Metric Cups
  • 75 grams unsalted butter
  • 50 grams oats
  • 100 grams spelt flour
  • 25 grams ground almonds
  • 100 grams type 00 flour (also known as pasta flower)
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon cinnamon
  • 2 tablespoons manuka honey
  • 1 tablespoon wild Greek honey
  • 100 millilitres cranberry juice
  • 100 millilitres semi skimmed milk
  • 1 large egg
  • dried cranberries (these can be adapted to suite your taste and availability)
  • blueberries (these can be adapted to suite your taste and availability)
  • barberries (these can be adapted to suite your taste and availability)
  • goji berries (these can be adapted to suite your taste and availability)
  • 3 ounces unsalted butter

  • 1 ounce almond meal
  • 4 ounces type 00 flour (also known as pasta flower)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 tablespoons manuka honey
  • 1 tablespoon wild Greek honey
  • 3½ fluid ounces cranberry juice
  • 3½ fluid ounces reduced fat milk
  • 1 large egg
  • dried cranberries (these can be adapted to suite your taste and availability)
  • blueberries (these can be adapted to suite your taste and availability)
  • barberries (these can be adapted to suite your taste and availability)
  • goji berries (these can be adapted to suite your taste and availability)

Method

Simply Divine Muffins is a community recipe submitted by KitchenGoddess and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat the oven to gas 6.
  • Mix the dry ingredients together in a bowl (excluding dried fruit).
  • Measure the liquids together in a jug and add the egg, whisk together.
  • Melt the butter and honey together, stirring occasionally.
  • Mix the butter, honey, milk, cranberry juice and egg into the dry ingredients very gently until just combined (use a fork). Mix in the dried fruits.
  • Divide into 12 muffin cases and bake for 15 minutes or until a cake tester comes out clean and the muffins are golden brown in colour.
  • Serve as they are or spread with marmalade, jam or if feeling 'naughty' Nutella (this is fab btw) or peanut butter.
