Gingered Melon/Lime Compote

Introduction

Rather than hiding these lovely fruits under a piecrust, (allthough nothing wronge with that!), let them lighten up your room to add sparkle to table and plate alike!

Ingredients

Serves: 4

  • 2 cups water
  • 1 cup dry white wine
  • 1¼ cups sugar
  • 4 tablespoons lime juice
  • 3 slices lime peel
  • 2 tablespoons grated fresh gingerroot
  • 3 cups melon balls (cantaloupe, honeydew or Crenshaw)
  • 2 tablespoons minced candied stem ginger

  • In a saucepan, combine water, wine, sugar, limejuice, limepeel and ginger, bring to a boil and simmer, stirring until sugar is dissolved.
  • Add the melon balls and simmer 5 minutes.
  • With a slotted spoon, transfer melon to a bowl and reduce poaching liquid until lightly thickened.
  • Strain syrup over the fruit and stir in the crystallized ginger.
  • Let cool and chill, covered for 2 hours.
  • Additional Information

    * Peeled and quartered kiwi fruit or stemmed Figs, halved, may substitued for the melon.
