Ingredients

Serves: Makes 12-15 small pancakes

Metric Cups
  • 250 millilitres pineapple juice
  • 100 grams raw sugar
  • 1 tablespoon lime juice
  • 2 bananas
  • 2 tablespoons caster sugar
  • 30 grams butter
  • 300 grams self-raising flour
  • 250 millilitres milk
  • 9 fluid ounces pineapple juice
  • 3½ ounces raw sugar
  • 1 tablespoon lime juice
  • 2 bananas
  • 2 tablespoons superfine sugar
  • 1 ounces butter
  • 10⅗ ounces self-rising flour
  • 9 fluid ounces milk

Method

Little Banana Pancakes is a community recipe submitted by Krakra58 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Bring the Pineapple juice to a boil, together with the sugar on a high heat, cook until it becomes a syrup.
  • Remove from heat and stir in the lime juice. Set aside and cool. Slice the banana into not too thin slices and toss them in the sugar.
  • Heat some butter and bake some little pancakes on 1 side for 1 minute.
  • Place a slice of banana on top and wait a little while before you turn the pancake over, then fry another 2 minutes. Remove from pan and set aside, keep warm.
  • Serve them with the syrup on the side and decorate them with some slices of banana.
