Strawberry and Limoncello Tiramisu

A nice variation on the classic, make your own Limoncello, it is really easy and makes a great gift with a few recipes on how to use it (personally, mine tends to end up over ice and drunk as is!!!)


Serves: 6

  • 2 eggs
  • 63 millilitres superfine sugar
  • 255 grams mascarpone cheese
  • 2 punnets strawberries
  • 125 millilitres limoncello
  • 125 millilitres cold water
  • 198 grams savoiardi cookies (Italian sponge fingers - I often substitute with store bought Madeira cake or sponge)

  • Put eggs and sugar in bowl and whisk until thick, creamy and almost pale yellow.
  • Whisk in mascarpone until smooth.
  • Hull and dice half the strawberries.
  • Combine water and limoncello in a bowl, dip biscuits one at a time and arrange in base of serving dish. Cover with half mascarpone mix, then diced strawberries. Repeat with another layer of dipped savoiardi.
  • Top with a smooth layer of mascarpone mix.
  • Chill for 5-6 hours or overnight. Decorate with remaining strawberries before serving. Serves 6
